The Geelong Cake Decorating Centre (GCDC) is a family run, cottage based entity, that has taken advantage of the opportunity to fill a void left by another local business, operated by a dear friend, who has relocated to Melbourne.
Gailene is a qualified food handler supervisor and creates her custom wares in a registered kitchen. With a rapidly growing teenage family there are plenty of willing taste testers available.

Gailene also offers a select range of jams and preserves named “Mrs Tuwart’s”.

G.C.D.C. HISTORY
Known affectionately as Gaz, hails from Marshal and local to the Geelong area. She is the youngest daughter of a farming family of Scottish heritage. Both her parent’s families were quite large with Gaz being a young one amongst many older relatives.
She first began to cook on the family slow combustion stove that was only replaced by an electric model in the year 2000. Her love of cake decorating began during home economics classes at high school.
She has gleaned the skills of flower arranging from mother Annie Florence whom also had a desire to run Devonshire tea house. Mean while, Gailene’s dad Jim ensured she was well grounded in farm activities from lambing to tractor hydraulics.
Gailene also adds to her talents dressmaking and fashion design. Over the years Gailene has provided the family celebration cakes and catered for many significant family functions, especially the large Stewart family Christmas gatherings.
During her time she has been a Northern Territory tour bus and 4WD Adventure cook. Gailene has always yearned to teach in some capacity or other; cake decorating has evolved to fulfil that opportunity.
